Quick, Healthy Snacks to Battle Exam Brain Drain
It’s that time of year again. Time when many Irish households have someone in the family sitting the Junior or Leaving Cert. Or, if you’re lucky like me…both!
I’m not sure what induces more anxiety…the pressure of keeping spirits up (theirs and mine) or the pressure to keep our young Einsteins well-read and well-fed. Students sitting end of year exams seem to have ferocious appetites, and the key to sustaining energy levels is eating little and often. And above all staying hydrated!
Here is a recipe for a super quick pizza bagel snack that has some good fats, dairy and veggies. And a tasty smoothie recipe that ticks a lot of the “brain food” boxes.
Veggie Pizza Bagels
2 Bagels, split to make 4 halves
500g box of Passata tomato sauce
200g bag of shredded mozzarella cheese Mixed peppers, thinly sliced
Preheat oven to 180 C. Place the 4 bagel halves on a lined baking tray, with the insides facing up. Divide the passata evenly between the four bagels, spreading on top. Sprinkle 50g cheese on top of the passata. Divide the sliced peppers onto each bagel and drizzle olive oil on top. Bake in the centre on the oven for 10-12 minutes.
1 frozen banana
½ cup frozen blueberries
1 cup natural yoghurt
½ cup unsweetened almond milk
1 tbsp chia seeds
4 or 5 ice cubes
Blend all of the ingredients in a smoothie blender and serve straightaway.
